A little bit about this blog...
Good evening, dear readers,
Allow me to welcome you to a place where I hope to provide a wealth of recipes, ideas for healthy living and ways to help deal with food intolerances. I myself am unable to eat cows milk products; for about the last 8-years I have been lactose intolerant, something which has progressively gotten worse and worse to the point where I cannot eat yogurt without having gurgling stomach and intestines. Sigh. Yet through this struggle I have found some substitutes that are pretty darn good and worth a look, depending on the severity of your intolerance. Remember an intolerance is not the same as an allergy! I will provide a full post on dairy at some point here!
In the last year I have suddenly developed an intolerance to soy, of all things! As someone who cannot eat cows milk, I would often use soy milk as a substitute for cow, tofu as a sub for ricotta cheese, etc - so this was a bit of a bummer for me! I also love sushi and without soy sauce felt a bit sad, however I have come to enjoy my maki rolls sans soy sauce and it is still delicious! I have had to do a lot of shopping around to find yet another milk supplement for replacing my cow and soy milk - rice is really tasty, mild and goes well in cereals, baking etc. Coconut works well for dishes that require a high fat content too.
On top of my intolerances I have chosen to not eat red meat, ie beef. It is just a peculiarity of being me. I have somewhat recently come off of a 14-year strict vegetarian diet, now I occasionally eat meat now; I am trying to be very strict about that meat being free-range, hormone and antibiotic-free. I eat free range eggs. I sometimes eat seafood. I am, as my blog name implies, a "flexitarian" - essentially someone who partakes in a mostly vegetarian diet, but sometimes eats meat/seafood. I have found that this diet works for me, at this time in my life. So please, enjoy my blog!
