White bean and corn fritters

This week I wanted to make something a bit comfort-foodie, but I also wanted to make sure it was at least a little bit healthy! Enter corn fritters, but not like your grandma used to make, though they taste just as good! Rather than making a fritter in the usual sense, i.e. egg, flour, baking powder, milk and corn... I replaced almost all of the other ingredients with mashed white beans! Yum, full of protein but also mild enough in flavour to not overpower the corn sweetness. Perfect and also vegan!


The recipe is super simple, another reason to love it. Take a can of white beans, rinse them well. Put them in a large bowl and sprinkle with salt, pepper and about a 1/2 tsp. curry powder. The curry powder is optional, of course, but I thought it tasted great!


Next mash up your beans with a fork, you could also use a food processor here, but I don't have one yet so a fork it is!

Finally add about 1/4-1/2 cup of flour and a small can of corn (drained), play this by eye, you want the mixture to be able to mold into little fritter patties easily without being too sticky. While you shape your fritters, start a pan over low heat with about 1/2 inch of oil. I used olive oil for mine, but you could use coconut, canola, etc...


Fry the fritters until golden brown on each side, about 2 minutes or so on each side. Take out and rest a minute on a paper towel to absorb the excess oil. Serve and enjoy!


We ate ours with some local French bread, a ton of organic veggies and sriracha sauce for dipping! My hubby loved this recipe so much that it is now on the menu rotation for a while :)
