French fries!

Okay who doesn't love some hot and crispy, salty delicious, french fries? I certainly do, but with my continuous digestive issues I am extremely wary of getting fries out - so many of them are fried in soybean oil, even if the restaurant says it is not, it could be "vegetable" oils that has some soy in it and neither the proprietor nor I would know, on top of which some french fries might not consist of only potato so I would be wary of fillers as well.  So better safe than sorry, I have come up with a sinfully simple and delicious recipe in order to enjoy it anytime I want to!


So simple because it contains just 4 ingredients! No vat of oil needed either! Some gold potatoes (or sweet potato, which I added into mine), olive oil, salt and pepper - yep that's it! First things first, set your oven temp to about 425F or about 220C.  Line a baking sheet with parchment paper (this keeps them from sticking to the pan and is pretty important, otherwise your fries will all be stuck to the bottom and not very pretty).

Chop up your potatoes into strips, you can make them thicker but you will have to cook them a little longer. I like mine a bit thinner: 


Once all your fries are cut, lay them on the prepared pan and sprinkle about 2 tsp of oil, 1/2 tsp salt and a hefty dose of black pepper! I like a lot of pepper on mine, a good 10 grinds of the grinder at least ;p Mix up the fries so that they get evenly coated with the oil and spices, then flatten them out so there is a little breathing space between each one for even baking:


Pop it in the oven and bake for 30-35minutes in the middle rack. Mine were really getting crispy on the outer edges, so if you notice yours doing this you can take them out halfway through and mix them up so the outer ones don't burn.  Depending on your oven and how thick you cut your fries you may have to alter the cooking time as well.
