Rice and beans burritos

Since we are currently living in France, it is difficult, to say the least, to find any sort of Mexican or even Tex-Mex food. A few google searches finds a Mexican restaurant or two, yet are over an hour away from us - not really something feasible for weekly cravings! So this week I decided to make burritos... somewhat of a copycat from a little place we used to frequent in the States. It turned out easy to make, just gotta make time for the prep work of making the salsa from scratch...

After the salsa (which you can make the day before, allowing the salsa to sit and marinate will only make it better!) go ahead and start your rice. I used 1 cup of basmati rice, which I washed 2-3 times in order to reduce the starch and making it less sticky when it is finished. Add your washed rice to a pot and add 1-3/4 cups water and about 3tbsp tomato puree. Cook over medium-high heat until it boils then reduce the heat to low and simmer for 15 minutes. I always cover my rice the whole time it is cooking.

Just as the rice is finished add a small can of corn, drained (~1/2 cup) and a medium can of white beans (drained and rinsed), you can use black, pinto or even kidney here as well but I do not have pinto or black beans in my grocery stores here in France ... *sad face* ...and season with salt and pepper to taste.

My first batch of burritos I simply layered the rice and beans, half of a ripe avocado and a healthy heaping portion of salsa on a large tortilla, wrapped it up diaper style and voila!  If you want some spice I suggest drizzling a little hot sauce before wrapping it up - I used sriracha and it was deeeeelicious!

My second batch this evening I did everything the same, except this time I sauteed some mushrooms, onions and red pepper in olive oil and added this to my burrito! It was amazing and I would definitely recommend this addition!

So give it a try if you have a hankering for a yummy burrito, but your local shops don't carry the "required" ingredients for Mexican foods. This was wholesome, healthy and delicious and much cheaper than driving an hour each way to a place that might not have been as good. One day I'll try that French Mexican restaurant, but till then this will hold me over... :p
