Vegan banana raisin bread
I have been trying to learn the basics to recipe videos, I really enjoy watching recipe tutorials on Youtube and such, so I thought why not try it myself? So here goes, a little video (my first!) for a yummy banana bread that I love to make whenever we have too many ripe bananas in the house!

VEGAN BANANA BREAD
- 3 ripe bananas, mashed
- 1/4 cup oil, I use a mild olive oil
- 1/4 cup vegan milk, I use rice
- 1/4 cup brown sugar
- 1/4 cup regular sugar
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp. baking soda
- 1/4 tsp salt
- 1/3-1/2 cup raisins
Heat your oven to 350F (about 180C)
In a large bowl, mash your bananas and add in the oil, milk, sugar and vanilla. Mix.
Add in your dry ingredients (flour, baking soda, baking powder, salt) and mix till combined. Don't over mix or you will activate the gluten in the flour too much and it will become chewy!
Add in your raisins and fold.
Prepare your 9" round pan (as I used) or bread loaf pan with vegan butter on sides and parchment paper lining the bottom.
Pour your batter in, it will be thick and have to be spread with a spoon or spatula to get even in the pan.
Bake for 45-50 min. a toothpick inserted in the center should come cleanly out. The top will be a beautiful golden brown.
Allow to cool for at least an hour, outside of the pan, before serving.
