My "OMG these rock" pancakes!

Okay time to dish a little.

Since about April this year, my husband and I have been following a completely plant-based diet. This is something we had been leaning towards for some time, I had been vegetarian for most of my life and recently had begun eating a little meat and seafood, but then something changed... First I read a book by John Mackey titled The Whole Food Diet  and it really opened my eyes to just how good plant-based eating was for the body (if done correctly!) and then we both read Dr. Michael Greger's book How not to die and from that day we swore off animal products for the time being. I don't know if things will change, I do not know if this is a lifelong commitment or something we will do on and off.  However, we both feel great right now and it has been a good decision for Us

I think it is pretty clear, based on numerous studies, that eating less animal products is better for the body and for the environment. You really reduce your carbon footprint by eating plants instead of meat or dairy. It is also worth noting that we have an incredibly screwed up factory farm system, one which was written about by Upton Sinclair over 100 years ago! It really hasn't changed too much since then; we still treat the animals as if they were not living beings, they are abused, often tortured, and kept in ridiculously unlivable conditions.  I, for one, would rather not partake in that anymore. 

So this aside, my recipes, although they were predominantly vegetarian before, I will be focused on plant-based recipes for the time being. I plan on working to find really yummy recipes and finding ways to make them plant-based! Which will be super fun for me!

Today it was a brisk fall day, we cleared out the tomatoes from our potted garden. Took a walk about town and basked in the beautiful changing leaves. This particular afternoon was fueled by a delicious new pancake recipe!  I was playing around with using oats in my pancakes to make them a bit healthier, I came upon a nice and fluffy, delicious pancake that only took minutes to throw together!



Pancakes

1 cup flour (I used all-purpose)
1 cup oat flour
4 tsp. baking powder
1/2 tsp baking soda
1 tbsp ground flax seed
2 cups plant-based milk (I used almond) 
2 tbsp sweetener (I used raw sugar)
2 tbsp apple cider vinegar

Start by grinding up your oat flour from whole oats and grinding a tablespoon of flax seed.  In a medium sized bowl, mix these with the flour, baking soda, baking powder and sugar.  If you use a liquid sweetener add it with your liquid ingredients.  Once the dry ingredients are combined, add in your milk and apple cider vinegar. Give it a whisk until combined, don't over mix or it will become chewy from the gluten! 

The mixture seems kind of liquidy, but they cook up so light and fluffy, I think it works this way! 

Cook on a lightly greased cast iron pan, I am sure you could use a non-stick skillet as well, I just don't have one.  

I cooked on one side until little bubbles covered most of the pancake, which was about 2-3 minutes for me over med-low heat. Flip over and cook another minute. You can poke a little hole in the underside to make sure it is cooked through. 

This recipe made enough for 2 people perfectly, we each had two medium sized pancakes and a couple tiny silver dollar sized ones for the side. 

We had some leftover apple sauce from the other day so had that on top of them, it was so delicious and perfect for this autumn morning...
