Breakfast time!

Breakfast, the most important meal of the day, no? I think it is pretty important! There was a time when I would skip breakfast, a cup of coffee and I was good to go... Or so I thought...  Breakfast is super important to get your system up and running for the day. A healthy meal within an hour or so of waking gets your metabolism revving; to "break -a- fast" will take your body out of hunger mode - so breaking that nighttime "fast" with a healthy meal is very important to getting you off on the right foot for the day! Think about it for a second, if you wake up and go straight to work or school with no food or something nutritionally sparse, you will feel it - studies have shown that cognitive performance drops when you are hungry, meaning you will not function as optimally at work or school if you do not have a lovely breakfast pulling you through to lunchtime.


I cannot skip breakfast anymore, and sometimes an unhealthy breakfast is worse because I am sending signals to my brain that I am eating something (ie a donut, a plain bagel, some sugary cereal, etc) but there is no real nutrition behind that signal! It is empty calories that will not fuel my body and my brain through the morning, so not long after eating that unhealthy breakfast I am listening to my stomach growl and wondering if I can make through to lunch without a snack!  Whereas if you start the day with something wholesome, healthy and with lots of nutrients (protein, fiber, etc) you can ride straight through to lunch with your focus on being productive and not your growling stomach!

My breakfasts are usually either some eggs and veggies with a piece of toast, or a big bowl of oatmeal with fruits, nut butter and a little honey for sweetener.  This week I made us fajitas and we had some leftover tortillas, so I decided to swap it up a little and make some breakfast tacos! They were so simple, yet very hearty and healthy and kept us going to lunchtime!


This little taco was super simple and really delicious; take a tortilla and slice up half of a ripe avocado in it. Next slice up some peppers (you can throw in some mushrooms and onions as well too!) and sautee a minute, add an egg or two to the peppers and scramble up. Put the egg and pepper mixture on the tortilla and sprinkle with some chopped fresh tomato and drizzle with a little sriracha, or other hot sauce. You can also sprinkle with a little fresh cilantro if you want to get fancy! :p  


Simple and delicious! Remember a healthy breakfast starts your day on the right foot, it will allow you to concentrate on your tasks ahead and to be in a better mood! So go ahead and make that breaky, cheers until next time!
